Lisa Snowdon's Mexican Eggs
We're back with our brand ambassador, Lisa Snowdon, as she serves up Mexican eggs: full of flavour and loaded with protein. Your next go-to brunch idea. Thank you Lisa!

Ingredients 

Per serving: ~400 kcal, 24g protein, 15g fibre

Ingredients  

Serves 2 

1 seeded or wholemeal tortilla wrap

1 tin chopped tomatoes

1 tin black beans

2 eggs

½ tsp paprika

½ tsp chilli flakes

½ tsp ground cumin

Matchbox-sized piece of feta cheese

Fresh coriander to garnish

Optional: sliced avocado on the side.

 

Method 

In a large pan, combine the tomatoes and beans. Stir in the smoked paprika, chilli flakes, and ground cumin. Simmer gently for several minutes to allow the flavours to develop. 

Create small wells in the mixture and crack the eggs directly into the pan. Cover and cook until the eggs are set to your preference. 

While the eggs cook, lightly toast the tortillas in a dry pan or briefly over an open flame until warm and slightly charred. 

To serve, top each portion with sliced avocado, fresh coriander, and crumbled feta. 

Finish with a drizzle of hot sauce to taste and enjoy alongside a chilled glass of Benefit juice.

This dish is colourful, flavourful, and packed with goodness. It’s a brilliant example of how ingredients can be combined to make a meal that’s both satisfying and nutritionally balanced.

Fibre

With 15g fibre per portion, these Mexican Eggs provide half of the UK’s daily recommendation (30g). Fibre comes mainly from black beans and, if served with a wholegrain wrap, is boosted even further. Fibre supports regular digestion, a diverse gut microbiome, heart health, blood sugar control and satiety. If you’re not used to a high-fibre diet, start with a smaller portion and build up gradually.

Protein

This meal delivers ~24g protein, thanks to eggs, beans, and feta — a perfect example of “protein stacking.” One egg alone provides around 6–7g protein, but combining multiple sources raises the total substantially. Protein is vital for muscle maintenance, immune health, hormone production, and keeping you full for longer.
